Treat every published number as a ceiling you will never reach, and use it to compare watches against each other rather than against your own needs.
The three modes, and what separates them
Smartwatch mode is the watch just being a watch: time, steps, background heart rate, notifications. This is where the multi-week figures come from, and where the watch spends most of its life.
Standard GPS mode fixes your position roughly once a second on one satellite frequency, and it is what most watches default to for a run or a ride. It is the number that matters if you train, and usually a small fraction of the smartwatch figure.
Maximum accuracy GPS, sold as multi-band, dual-frequency or all-systems, listens on two frequencies at once and to more satellites. It genuinely helps where GPS struggles, in deep valleys, under tree cover and between tall buildings, and it is the most expensive setting on the watch. What each setting really costs
Hour figures per setting would be worse than useless, because the same setting costs different amounts on different hardware. What holds across watches is the ranking. Work down this list and you will find most of the battery you are missing.

Overnight blood oxygen deserves a note. Age and cold both take a cut
Lithium batteries lose capacity with charge cycles and with time, gradually enough that most people notice only when a long day suddenly runs short. Budget for it: a watch that only just covers your longest event today will not cover it in two years.
Cold is more dramatic and completely reversible. Capacity drops sharply in freezing conditions and returns as the watch warms, so an alarming reading on a winter climb is usually not a fault. Wearing the watch under a sleeve cuff rather than over a jacket helps more than any setting.
Working out what you actually need
Take the longest single activity you genuinely do, not the one you imagine doing, and double it. Common mistakes
Buying flagship battery for a marathon. Almost any mid-range watch covers a marathon in standard GPS mode with room to spare. Endurance earns its price at ultra distance and on multi-day trips, rarely below.
Leaving multi-band on permanently. It only helps in genuinely difficult terrain. On open roads it costs battery for a track you could not tell from the cheaper mode.
Comparing watches on the smartwatch figure. Weeks of standby and hours of GPS are different currencies. If you train, compare on the GPS number, in the mode you will actually use.
